Breakfast Casserole

Ingredients

1/4 lb sharp cheddar cheese, grated
1/4 tsp dry mustard
1/4 tsp ground paprika
1/2 tsp salt
1/2 cup sour cream
1/2 lb bulk sausage, cooked and drained
5 whole large eggs

Preparation

Spray a 2-quart baking dish with cooking spray.

Sprinkle half of the cheese in the bottom of the prepared dish. In a small bowl, combine the mustard, paprika, salt, and sour cream. Add the sausage and spread the mixture over the cheese.

Cover with plastic wrap and chill overnight.

Preheat oven to 325° F. In a medium-sized bowl, beat the eggs and pour over the chilled sausage mixture. Sprinkle the remaining cheese over the top and bake for 25 - 30 minutes, or until the eggs are set. Serve immediately.
